Dear Restaurant Owner,

I started pulling filters to get a look at the plenum of the hood and much to my surprise, it looked great as well. At this point the owner was telling me how he had gotten a good deal on the cleaning by only paying $150. I was a little nervous, because this hood and the plenum looked really nice. I was wondering how in the world I was going to convince this owner of paying my cleaning fee which would have been at least twice the price.
That's when it happened.
